How to Prepare the Southwest Turkey Soup

I love this Instant Pot Southwest Turkey Soup because it’s the ultimate comfort food without being heavy. The mix of tender turkey, hearty brown rice, and bold spices gives it that classic southwest taste while still being wholesome and healthy. Plus, the Instant Pot makes it ridiculously easy—just sauté, dump, and let it do the work! It’s one of my favorite go-to recipes when I need a fast, nutritious meal that my whole family loves.

Ingredients

  • Lean Ground Turkey
  • Brown Rice
  • Water
  • Gluten Free Chicken Bouillon Cubes (I use Herb Ox)
  • Yellow Onion
  • Baby Carrots
  • Bell peppers (small)
  • Celery
  • Black Beans
  • Corn
  • Olive Oil
  • Cumin
  • Black Pepper
  • Salt
  • Garlic Powder
  • Paprika
  • Oregano

Directions

  1. Start by prepping your vegetables and setting aside.
  2. Turn the instant pot to saute setting. Brown ground turkey and add 1 tsp of salt and 1/2 tsp of pepper while cooking.
  3. Remove cooked ground turkey and set aside in a bowl. The bowl will be hot, so use a cooking glove. Replace pot to saute setting and clear out any turkey juices.
  4. Add olive oil, and diced vegetables to the instant pot bowl. Stir around and let them sautee for a few minutes or until onion is translucent.
  5. Then add water, bouillon cubes, rice and the rest of the seasonings. Stir.
  6. Close Instapot lid, make sure to turn the pressure cooker valve and set to 12 minutes.
  7. Let the soup naturally release in pressure for 10 minutes before serving.
  8. Enjoy!

Alternatives & Add-ons

  • For more spice, add paprika and cayenne pepper.
  • For an Italian style soup, use Italian sausage and replace oregano with Italian Seasoning blend.
