Quick + Simple Gluten Free Chicken Fajitas
These gluten free chicken fajitas are a family favorite. They are quick and easy to make on a busy weeknight, and its easy to personalize by adding stronger spices! The juicy, seasoned chicken is sautéed with colorful bell peppers and onions that add a great, powerful flavor. This recipe is perfect when paired with gluten free tortillas.

Why Will You Love This Recipe?
Chicken Fajitas are a family favorite. When my husband and I were first married, of the first meals my husband taught me to make was fajitas. This is an adapted recipe from his family’s secret recipe. It was quick to make and perfect for our low budget since we were college students and super busy with no money. We experimented with several different types of corn tortillas, and since he was hispanic we were very critical about the taste, crumble, texture, etc. You can never go wrong with fresh, homemade corn tortillas. But if you are getting store bought, try La Providencia!

We played with the seasonings too. His mom has a special combination of spices that she uses that taste amazing! However, it was not gluten free. We adapted the recipe to better accommodate my gluten sensitivity and inability to handle spice. I did add additional notes with adjustments to the seasonings if you are looking for something with a bit more kick than me!
How to make it
Fajitas are a rather simple recipe and pretty forgiving. It is easy to adjust spices and add vegetables as you go, so it is the perfect dish to play and experiment with to find the right ratios and side dishes for you.

Ingredients
- 1 lb chicken breasts
- 1/2 yellow onion
- 1-2 bell peppers
Seasonings
- Paprika
- Cumin
- Garlic Powder
- Onion Powder
- Chili Powder*
- Red Pepper Flakes*
*optional, include if you are looking for something spicy!
Step by step information
- I start by heating a large skillet pan to medium heat. I pour out 1-2 tbsp of olive oil onto the pan and add garlic. Let it sauté for a few minutes while you prepare the chicken. Please note: Do not let the garlic cook for more than 2 minutes before adding the chicken or it will burn.
- In a small bowl, combine the seasonings. If you want something mild, stick with my ratios in the recipe below. But, if you are looking for something with a little extra spice, add 1/4 tsp extra paprika, 1-2 tsp chili powder, and red pepper flakes to taste. When the seasonings are mixed, pour it over the cubed chicken and mix until it is evenly coating all the chicken.
- Pour the seasoned chicken on top of the garlic and cook the chicken entirely. be careful not ot burn the garlic.
- When the chicken is cooked, add the onion and bell peppers right on top. Cover the pan with a lid and let it sit for 5 minutes or until the vegetables have softened. While the vegetables are softening, now is the perfect time to prepare the tortillas.
Substitution & Add-ons
Fajitas are best served over corn tortillas, with a side of mexican rice and grilled veggies. I like to add more vegetables to my fajitas. You can often find me adding quartered zucchini or extra bell peppers to my recipes. You can also try beef and chicken in a mixed fajita- thats delicious. Cut bell pepper(s) and onion into slivers and set aside.

Chop chicken into small chunks.

Pour seasonings over the chicken and mix until chicken is evenly coated.

Over medium heat, pour oil into pan.

When hot, add onion and cook until onion is almost transparent. Then add bell peppers.

Remove vegetables from pan and set aside.

In the heated pan, add chicken and cook until the chicken chunks reach 160ºF.

When chicken is fully cooked, add bell peppers and onion back into the pan and mix.

Let pan rest for a few minutes while you heat the corn tortillas.
