You guys, this chicken noodle soup is the best thing I have ever made! It’s so warm, comforting, and the flavors are soothing. Perfect when you’re sick and needing something to help nurse you back to health. It is packed with protein, making it perfect for busy days or when I want something nourishing. I love how the gluten-free chickpea pasta holds up so well in the broth, adding even more nutrients and making every bite so satisfying!
Ingredients

- Gluten Free Rotini (I use Banza Chickpea Pasta)
- Chicken
- Chicken Broth
- Lemon Juice
- Baby Carrots
- Potatoes
- Onion
- Celery
- Garlic
- Olive Oil
- Garlic Salt
- Salt
- Bay Leaves
- Poultry Seasoning
Directions
- Start by chopping your veggies: potatoes, carrots, onions, and celery.
- In a large pot, heat olive oil and sauté garlic until fragrant.
- Add your veggies and stir!
- Now, pour in a dash lemon juice and fat free chicken broth. Stir and allow it to simmer.
- Cut chicken into 1″ cubes. Season it with garlic and poultry seasoning.
- Add chopped chicken to your soup and let it cook while the water comes to a boil.
- Add your gluten-free, high-protein chickpea penne pasta. Allow the pasta to cook in the boiling water per box instructions.
Alternatives & Add-ons
- Chicken alternatives: shredded herb flavored rotisserie chicken or canned chicken if you are short on time. You can also shred your chicken chunks once the chicken is fully cooked.
- If you want a creamy based soup, add 1/2c half and half.
- For a dairy free creamy soup base, use 13 ounces of full fat coconut milk
- Add bay leaves, oregano and/or thyme to add more herbal flavor.

Prepare Ingredients

Chop Vegetables.

Cut chicken into 1" chunks and coat it in poultry seasoning.
Prepare Soup

In a large soup pot, heat olive oil and minced garlic over medium heat.

Chop all vegetables and add remaining seasonings (Garlic Powder, Onion Powder, Italian Seasoning, and Bay Leaves) to the pot. Stir and allow all the seasonings to coat the vegetables. (add 1 tsp more oil if necessary)

Add broth, water, lemon juice, and to the pot. Stir.

Bring the soup to a boil, stirring occasionally.

Once the soup is boiling, add the Rotini pasta. Continue to let it boil for 7 minutes (adjust the time based on the noodle packaging instructions).

The soup will be completed when the noodles are soft and the chicken is cooked all the way through. (chicken should reach 160ºF in the middle. Check by lifting chicken chunks out of the soup and using a meat thermometer to check the temperature).
