This soup is a classic in my house. It is one of our favorite soup recipes, and BONUS, it’s dairy free! I love how coconut milk gives it that creamy and smooth texture without using dairy. The savory turkey, fresh veggies, and flavorful broth come together beautifully, and lite but filling meal that you can have year round. Plus, it’s an easy way to get a protein-packed meal in one bowl!

Ingredients

  • ground turkey
  • zucchinis
  • golden potato
  • onion
  • carrots
  • coconut milk
  • water

Instructions

  1. Start by sautéing onions and garlic in olive oil until fragrant.
  2. Add your ground turkey. Make sure to break it into small bite sized pieces and cook until no longer pink.
  3. Next, toss in golden potatoes, quartered zucchini and baby carrots.
  4. Cover your vegetables in creamy coconut milk and chicken broth, then let it simmer until soft.

Alternatives

  • Don’t want it dairy free? Use half and half instead of coconut milk.
  • Want a more traditional soup flavor? Don’t add the coconut milk and replace the zucchini with celery. That will give you a warm, classic, nutritious soup.

  1. In a large soup pot, cook olive oil and chopped onion on medium heat.
  2. Push onion to the edges of the pot. Add ground turkey and break it down into smaller chunks. Cook ground turkey until brown.

  3. Add chopped potato, zucchini, and carrots. Mix until covered in oil and turkey juices.
  4. Add coconut milk and chicken broth. Stir.
  5. Bring to a soft boil, for approximately 15 minutes. Stirring occasionally.
